上周五我在趕赴香港超現任化的赤鱲角新機場時,搭上一班時髦的高速火車,火車上的無線上網設施棒極了,讓我可以一路上用筆電盡情瀏覽網頁。

而當我自香港飛抵紐約甘迺迪機場時,就彷彿是從科幻卡通《傑森一家》的場景回到《摩登原始人》時代。入境大廳外觀醜、天花板矮,又擠滿人,使用行李推車還要付三塊美金。我環顧骯髒昏暗的大廳時,有一種似曾相識的感覺,然後我想起來了,那就好像是置身香港舊啟德機場的行李提領大廳內。

翌日,我從紐約搭上Acela這個美國自詡的子彈列車前往華府。路上試圖用手機進行電話訪談,但十五分鐘內便斷訊了三次,導致訪談過程一再被打斷。

對於這一切我只能捫心自問:如果我們自認很聰明,為何別人過得比我們好那麼多?我們的基礎建設對生產力如此重要,然而它出了什麼問題呢?

我們不能繼續抱持「船到橋頭自然直」的心態了。我們的減稅措施早就讓國家財政吃不消;我們紓困的汽車公司根本已成了摧毀財富的巨大機器;現行低價能源政策無法鼓勵對再生能源或省油車進行投資;公立學校缺乏阻止識字能力不足學生畢業的全國性標準;我們的大學教出了全世界頂尖的科學家和工程師,但這些外籍人士畢業時,我們卻下令他們回家,開新公司與我們競爭。

不惟如此,我們還有個老毛病,就是引導及獎勵智商最高的人才從事金融工程,而非實體工程。結果,那些火箭科學家和工程師變成在設計錯綜複雜的金融工具,搞錢滾錢把戲,而不是致力於設計汽車、教學工具、網路程式及醫療器材,以改善數百萬人的生活和生產力。

由於這種種原因,我們當前面臨的危機,已不只是一場光靠砸錢就能解決的金融風暴,我們的困境嚴重多了。事實上,我們這個國家已成了「通用汽車」的放大版,載沈載浮。請攬鏡自照吧:通用汽車就是我們。

我們需要的不只是紓困,而是重新啟動(reboot),我們需要重新組建、全面大翻修。正因為如此,接下來幾個月將是美國史上最重要的時刻之一。由於這場金融危機,歐馬巴提出的一兆美元經濟刺激方案已獲兩黨支持,我們必須確保每一分錢都花得很明智。

這些錢必須用來訓練教師、教育科學家和工程師、支付研發及建造最能提升生產力的基礎設施,不能虛擲在大而不當的計畫上。我希望政府少花些錢,多提些有創意的租稅誘因,以刺激民間部門活力,催化新的產業和市場。假如讓這些錢浪費在肉桶分肥上,我們便真的窮途末路了。

美國依然擁有繼續欣欣向榮的硬底子,我們仍有最具創意、多樣化、創新的文化與開放的社會,而在當今世上,誰能迅速想出新點子,並透過全球合作予以實現,誰就具備最重要的競爭優勢。中國或許有一流的機場,但它上周卻走了回頭路,對《紐約時報》等西方新聞網站實施審檢,新聞審檢只會限制人民的想像力,這麼做真的、真的很笨。也正因為如此,儘管我們過去失策連連,廿一世紀將會是誰稱雄猶未可知!

已故甘迺迪總統帶領我們展開探月之旅。歐巴馬則必須帶領我們重新發現、建構及創造我們自己的後院。

The Great Depression was a worldwide economic downturn starting in most places in 1929 and ending at different times in the 1930s or early 1940s for different countries. Shabu shabu is a Japanese hot pot similar to sukiyaki. Basically, thinly sliced meat and other ingredients are cooked in a skillet at the table. Meat for shabu shabu is thinner than that for sukiyaki. If it's possible, ask a butcher to slice the tender part of beef into paper-thin slices. Diners swish a slice of meat in the boiling dashi soup, like having it swim in the soup. It's said that the name, shabu shabu, came from this swishing action. Ingredients:


·         3 inches dried kombu (kelp)


·         1 lb. hakusai (Chinese cabbage), chopped


·         1/4 lb. negi, diagonally and thinly sliced


·         1 block cotton tofu, cut into bite-size pieces


·         1 enoki mushroom, cut in half


·         1/4 lb. carrot, cut into thin round slices


·         1 1/2 lb. sirloin beef, very thinly sliced


Preparation:


Fill a deep electric pan or a medium skillet two-thirds full with water. Soak kombu in the water for 30 minutes. Arrange the ingredients on a large plate. Set the electric pan, ingredients, and serving bowls with dipping sauce at the table. Heat the water and remove the kombu just before the water comes to a boil. Put a slice of beef in the boiling soup and swish it gently for a few seconds. Eat the meat, dipping in the sauce. Skim off any foam or impurities (aku) that rise to the surface as you repeat cooking and eating meat. Add other ingredients in the boiling soup and simmer for a few minutes. Eat them dipping in the sauce as well.


Makes 4 servings







秋冬吃火鍋不要犯五大錯

     吃火鍋千萬不可心急,從火鍋中取出的食物要量小,並等降溫後入口為宜。應


 


做到「寧捨三鮮,不要太燙」。


錯誤一:一熱當三鮮

表現:


 


熱騰騰的火鍋中的美味一夾起來便直往嘴裡送,燙得舌頭發麻額頭髮汗大呼過癮,


 


並美其名曰:「一熱當三鮮」真實傷害:口腔、食道和胃黏膜一般只能耐受 50


 


的溫度,太燙的食物,就會損傷黏膜,而火鍋濃湯的溫度可高達 120℃,取出即吃


 


的話,很易燙傷口腔、舌部、食道以及胃的黏膜。一些本來就有復發性口瘡的人,


 


了火鍋後容易上火,其口瘡發生機會因此又多出好幾倍,或者原有的口腔黏膜炎症


 


出現加重症狀。

     如此反覆,還會誘發食道癌變。最危險的是那些患有口腔黏膜白斑或扁平苔癬


 


等癌前病變的人,火鍋的高溫和調料的刺激,都會使這些病情加重。

糾錯:


 


吃火鍋千萬不可心急,從火鍋中取出的食物要量小,並等降溫後入口為宜。應做到


 


 


「寧捨三鮮,不要太燙」。



錯誤二:半生不熟最鮮美

表現:


 


為追求鮮脆嫩滑的口感,食物在火鍋裡燙一下就吃。


 


真實傷害:這樣的吃法除了造成消化不良外,潛藏於食物中的細菌、寄生蟲卵會隨食物吞入胃腸從而導致疾病的發生。


 


據研究,三種嚴重的寄生蟲病---旋毛蟲、絛蟲和囊蟲都可能通過火鍋傳播。不


 


潔的豬肉片和牛肉片裡很可能含有這三類寄生蟲。目前,雖不能肯定羊肉裡是否含


 


有旋毛蟲、絛蟲和囊蟲,但曾有報道有人因吃涮羊肉而得了旋毛蟲病的事件。如果


 


得了寄生蟲病,就會渾身乏力,肌肉酸痛,身體浮腫,有時候腳踏地面都會有刺痛


 


的感覺。

糾錯:


吃火鍋的時候一定要將肉切薄、多燙,涮豬肉片、牛肉片時,一定要涮熟再吃。同


 


時,還要看肉片上有無白色、米粒狀物質,如有,則可能是囊蟲卵。


錯誤三:冷、熱混吃求「中和」

表現:


一口麻辣燙一口冰凍啤酒,這是許多人喜歡的火鍋吃法,美其名曰「中和」。真實


 


傷害:忽冷忽熱,對胃黏膜極為不利,極易造成胃腸疾病。

糾錯:


 


吃火鍋時應盡量避免喝冷飲。



錯誤四:讓辣來得更猛烈些吧

表現:


 


一提起火鍋,又麻又辣又燙的口味總成了首選,因為那被辣得大汗淋淋的感覺實在


 


太過癮了。


 


真實傷害:麻辣火鍋對胃腸的殺傷力不難想像。


 


火鍋的辛辣味道最先刺激的是食道,接著迅速通過胃、小腸等,嚴重刺激胃腸壁黏


 


膜,引起胃酸和脹氣,除了容易引發食道炎、胃炎外,腹瀉也在所難免。


 


有便秘或痔瘡「前科」的辦公室一族,吃火鍋更要嘴下留情。否則,痔瘡患者容易


 


因肛門四周經受刺激括約肌過度充血而復發,便秘患者會因此更加「添堵」。

糾錯:


 


儘管每個人對辣的耐受度不同,但是為腸胃著想,醫生認為,又麻又辣的火鍋還是


 


少吃為妙;切不可一下子吃得太多,並要盡量把調料調至微辣,少喝火鍋辣湯。另


 


外,吃完火鍋後要多喝些開水或濃茶,以稀釋辣汁,減輕對腸胃的刺激,這樣胃腸


 


都會舒服一些。一旦有什麼不適,趕緊喝些清淡的飲品如稀米粥或牛奶保護腸胃


 


壁。


錯誤五:火鍋湯底營養好

表現:


 


把涮完的火鍋湯底當「營養湯」喝光。


 


真實傷害:火鍋的湯大多採用豬、羊、牛油等高脂肪物質為底料,又多以辣椒、胡


 


椒和花椒等為佐料,吃多了易導致高血脂、膽石症、十二指腸潰瘍、口腔潰瘍、牙


 


齦炎、痔瘡等疾病。


 


另外,火鍋湯久沸不止、久涮不換,其中的成分會發生一些化學反應,產生有害物


 


質。如:肉類、海鮮中所含嘌呤(purine)物質多溶於湯中,湯中的高濃度嘌呤,經


 


肝臟代謝,會產生大量的硝酸,引起痛風,出現關節痛症狀,嚴重時會損傷腎功


 


能。

糾錯:


 


對於一次吃不完剩下的涮料和底湯,應倒掉。


 


如果是放在銅火鍋中過夜,更不要吃,不但有害健康,還可能引起銅氧化物急性中

A classic Swiss fondue with kirsch, Swiss cheese, and crusty bread.


Ingredients:


·         1 medium clove garlic


·         2 cups dry white wine


·         1 pound Swiss cheese, shredded


·         1 teaspoon cornstarch


·         3 tablespoons kirsch or brandy


·         pinch ground nutmeg


·         dash hot pepper sauce


·         French bread or other crusty bread, about 2 loaves, cut into pieces (all pieces should have some crust)


Preparation:


Rub a fondue pot with garlic clove. Pour in wine and place over low heat. When air bubbles begin to rise to the surface, begin adding shredded cheese. Stir constantly until all cheese is melted. Dissolve cornstarch in the kirsch or brandy; add to cheese fondue mixure. Continue to cook and stir for 2 to 3 minutes, then season with nutmeg and pepper sauce. Place pot over alcohol burner or other low heat source for serving. Serve with fondue forks for guests to use to spear bread and dip into cheese fondue.
Cheese fondue serves 6.

Catfish meat is tender and delicious, when I was in Taiwan, some times the farmer sold to my mother when they cought in the rice field or the small brook in the wild.


You can cook with chinese herbs and add some rice wine; that is good for winter time.


It will keep you warm and against the cold or flu.


Also in Thai food, there is one dish called Deep Fried Catfish, for the people love spicy food that is a bomb.


This is cheap fish for poor people.

Watercress is a very good for weight lost.


It is widely added in the weight lost diet.


And actually we can see it in our daily traditional dishes, especial in the Southern Chinese dishes such as Cantonese and Taiwanese.


Hereunder I quoted a traditional soup prepared with some Chinese Herbs; this is very light soup, it will be very nice after holiday feast.

This recipe is revised for a few times and we really like it with chicken (versus pork ribs), while the addition of pao shen makes this soup more ‘cooling’ & ‘herby’. This is an easy & nutritious soup which is perfect for the hot & humid weather in Singapore . The hamsters are sure discerning, as the benefits of watercress are countless (among them: anti-oxidant, anti-cancer, high in Vitamin C).


- 1/2 fresh chicken, chopped and skin removed (or 2 chicken drumsticks/thighs, or 200g pork ribs)
- 200g watercress (ends trimmed, separate stems & leaves)
- 80g carrots, peeled & cut to pieces (I used peeled baby carrots as a short cut)
- 15 red dates (pitted)
- 1 tbsp wolfberries
- 1200ml water
- 10 short american ginseng (aka ‘Pao Shen,
泡参) [optional]
- a small pinch of salt [optional]


Directions
1. Blanch chicken in boiling water for 5 minutes (so that you are rid of the icky small bits). Set aside.
2. Place water, watercress stems, carrots, red dates and short american ginseng in pot and bring to a boil. Add the previously blanched chicken, reduce heat to low and simmer for about 20 minutes.
3. Add watercress leaves and wolfberries. Continue boiling for 10-15 minutes*.
4. Season with salt if needed.


* Watercress leaves are added later so that they stay crunchy. If you prefer them soft or don’t intend to eat the watercress, you can place it together with the other ingredients in step 2. Wolfberries are added later so that they stay firm and will not burst.

中新网1210日电 据中国政府网消息,国务院办公厅关于2009年部分节假日安排的通知日前下发。根据通知,元旦放假3天,11日至3日放假;春节放假7天,从125日至31日;101日至8日放假,共8天。

以下为通知全文:

各省、自治区、直辖市人民政府,国务院各部委、各直属机构:

根据《国务院关于修改<全国年节及纪念日放假办法>的决定》,为便于各地区、各部门及早合理安排节假日旅游、交通运输、生产经营等有关工作,经国务院批准,现将2009年元旦、春节、清明节、劳动节、端午节、中秋节和国庆节放假调休日期的具体安排通知如下。

一、元旦:11日至3日放假,共3天。其中,11(星期四、新年)为法定节假日,13(星期六)为公休日。14(星期日)公休日调至12(星期五)14(星期日)上班。

二、春节:125日至31日放假,共7天。其中,125(星期日、农历除夕)126(星期一、农历正月初一)127(星期二、农历正月初二)为法定节假日,131(星期六)照常公休;125(星期日)公休日调至128(星期三)124(星期六)21(星期日)两个公休日调至129(星期四)130(星期五)124(星期六)21(星期日)上班。

三、清明节:44日至6日放假,共3天。其中,44(星期六、农历清明当日)为法定节假日,45(星期日)照常公休。44(星期六)公休日调至46(星期一)

四、劳动节:51日至3日放假,共3天。其中,51(星期五、“五一”国际劳动节)为法定节假日,52(星期六)53(星期日)照常公休。

五、端午节:528日至30日放假,共3天。其中,528(星期四、农历端午当日)为法定节假日,530(星期六)照常公休;531(星期日)公休日调至529(星期五)531(星期日)上班。

六、国庆节、中秋节:101日至8日放假,共8天。其中,101(星期四)102(星期五)103(星期六)为国庆节法定节假日,104(星期日)照常公休;103(星期六)公休日及中秋节分别调至105(星期一)106(星期二)927(星期日)1010(星期六)公休日调至107(星期三)108(星期四)927(星期日)1010(星期六)上班。

节假日期间,各地区各部门要妥善安排好值班和安全、保卫等工作,遇有重大突发事件发生,要按规定及时报告并妥善处置,确保人民群众祥和平安度过节日假期。

Yogurt is good for cleansing for our body.  A lot of healthy old senior citizens take it in their daily diet.

Recipe


Super-Simple Sorbet


By MARK BITTMAN


Time: 10 minutes


1 pound frozen strawberries or other fruit


1/2 cup yogurt, crème fraîche or silken tofu


1/4 cup sugar, more or less.


1. Put all the ingredients in a food processor container along with a couple of tablespoons of water. Process until just puréed and creamy, stopping to scrape down the sides of the bowl as needed. If the fruit does not break down completely, add a little more water through the feed tube, a tablespoon or two at a time, being careful not to over-process or the sorbet will liquefy.


2. Serve immediately or freeze it for later; if serving later, allow 10 to 15 minutes for sorbet to soften at room temperature.


Yield: At least 4 servings.
