Recipes for Health Papaya and Blueberry Salad With Ginger-Lime Dressing
By MARTHA ROSE SHULMAN
Though blueberries aren’t a tropical fruit, they go well with bright yellow or orange fruits from warm places.
Papaya is high in potassium and contains enzymes that help break down proteins.
3 tablespoons freshly squeezed lime juice
1 tablespoon mild honey
2 tablespoons finely chopped crystallized ginger
2 ripe papayas, peeled, seeded, and diced
1 cup blueberries
1 tablespoon slivered fresh mint leaves, plus mint sprigs for garnish
1. Mix together the lime juice, honey and ginger in a large bowl.
Add the fruit and slivered mint leaves, and toss together.
Serve, garnishing each bowl with a sprig of fresh mint.
Yield: Serves four to six.
Advance preparation:
You can make this a few hours before serving, without the addition of the mint. Refrigerate, and just before serving toss with the slivered mint. Martha Rose Shulman can be reached at martha-rose-shulman.com.
