The avocado (Persea americana) is a tree native to the Caribbean, Mexico, South America and Central America, classified in the flowering plant family Lauraceae along with cinnamon, camphor and bay laurel. The name "avocado" also refers to the fruit (technically a large berry that contains a large seed) of the tree, which may be egg-shaped or spherical.
Avocados are a commercially valuable fruit and are cultivated in tropical climates throughout the world (and some temperate ones, such as California), producing a green-skinned, pear-shaped fruit that ripens after harvesting. Trees are partially self-pollinating and often are propagated through grafting to maintain a predictable quality and quantity of the fruit. Avocados are perennial.

Guacamole Recipe:
Ingredients:
* 4 ripe, avocados, peeled and pitted
* juice of 2 lemons
* 1/4 cup chopped cilantro
* 1/4 cup onion, diced (use red onion if available)
* 2 teaspoons garlic, minced
* 1 tomato, diced
* 5 jalapeno chiles, minced and seeded
* 1/4 teaspoon ground cumin
* Salt to taste
* dash of Chili powder
Directions:
1. In a large bowl, combine lemon juice with avocados and mash coarsely with a fork.
2. Add all the remaining ingredients to the avocado mixture, stirring until well combined.
3. Refrigerate for 30 minutes prior to serving.
This is good party food, usually we serve with tortilla chips.
